Inspired by nature, this recipe was created from wild foraged blueberries from the Norwegian countryside and paired with Keith’s Cacao for a delicious twist on a classic dessert!

  • 1 ⅓ cups Keith’s Cacao, finely chopped
  • 16 oz Silken Tofu
  • 2 cups Blueberries
  • 3 tbsp Honey
  • A dash of Vanilla

Instructions

  1. In a double-boiler (bain-marie), melt the finely chopped cacao over low heat, stirring occasionally.
  2. While the cacao is melting, drain silken tofu and pat dry.
  3. Add the prepared tofu, blueberries, vanilla, and honey to the blender and blend until creamy and smooth. You will see visible bits of blueberry; at this stage, the cream will be a vibrant shade of purple.
  4. When the chocolate is ready, add to blender and blend again until fully incorporated and smooth.
  5. Add more sweetener if needed.
  6. Transfer mousse into 4 ramekins or serving dishes. Cover and leave in the refrigerator for a minimum of 60 minutes to set.
  7. When it’s time to serve, uncover and garnish with fresh blueberries, cacao nibs or even fresh mint! Enjoy!
